I assume you are having problems disconnecting the water tube as the doors just come off after bolts are removed. To release the water pipe to the door do this, push in on the blue end of the connector and pull on the hose at the same time, it will then come out of the quick connect connector
I wanted to add that 20972 is not the full model number, if you need anymore assistance i require the fuell number, it is on a tag at the rear or in the paper work that came with the fridge.
The connectors are behind the panel on the inside of the door, remove the panel to expose the connectors.
That (79753) is still not a complete model number, please go to the web link below and select the fridge that is yours from the list, then you can look at the parts in exploded diagrams. Can't you provide a step by step procedure to remove the doors? There are bolts to remove and electrical connections as well.

Were you able to find Model #79753 Kenmore Elite info for removing the french doors and the freezer door so we can move it out of the kitchen for remodeling of the room
