Is it getting enough fuel? Have you replaced the fuel filter and or air filter? If either or both are dirty or restricted it could cause hard starting and poor performance. Have you checked the solenoid wire on top of the battery? Try removing cleaning and re-installing solenoid wire and battery cables. Also have your battery tested. Just because it is turning the engine over does not mean it is spinning fast enough to start. A weak battery can also cause damage to your starter.

cts coolant temperature sensor is malfunctioning

Sounds like a spark plug, then if its not that have the battery checked.

It's an xt600 engine with 1 cylinder so 1 spark plug, remove seat & fuel tank

Just raise the seat and find the relay located next to the battery, remove the to nuts holding the wires on and unplug the small harness, install new one and replace the seat

power to switch then from switch to horn other side needs to be grounded usually marked pos neg

Is there a separate fuse for the brake - tail light

doesnt it have an oil tank and pump and manage its own mixing?

Will it not go into park or will the light not come on? If it goes into park look at the switch. Check and make sure there is nothing binding the shift linkage or that the linkage is not bent. If all looks good adjust it. Adjust your shift linkage just enough for it to go into park. Then check engagement in other positions

IAT stands for intake air temperature, the sensor is going to be located in the air snorkel tube/box air cleaner or the tube before the carb/throttle body (usually has 3 wires, reference voltage, ground, sensor output) Btw, I’m available to help over the phone in case u need at https://www.6ya.com/expert/mike_a0891ab86974ea74
