How do I remove wheel?

You first have to pry the cap off the wheel with a screwdriver then under the cap there should be either a pin which you pry off or a nut which you loosen.

Simpson 3000 pressure washer... when trigger is released ,builds pressure so much then can not get trigger to spray. need to shut down release all pressure and restart

There is a pressure release valve in the pump. That pressure release valve is frozen shut (probably due to calcium or lime buildup). Other than disassembling the pump and clearing the calcium mechanically the only thing that I can think of is pouring CLR (Calcium, Lime, and Rust remover) into the port where the water hose connects and hope that the CLR will dissolve the calcium or lime. Pour as much CLR in as you can, connect the hose and pull the trigger and immediately release the trigger. You may have to pour CLR into the hose port several times.

Automatic idle quit working and engine runs at high speed continually building pressure not sure how to fix it

You can google for the manual, try http://simpsoncleaning.com/product/msh3125-s/ . Meanwhile look for a broken link or spring to the throttle linkage, usually an "arm" on the side of the motor.

Why does my Simpson pressure washer mega shot V3100 continue to build pressure when I release the gun and stays on high speed

There is a thermal pressure relief valve on the pump that opens when the pump starts to heat up.

What oil viscosity and how much on my simpson pressure washer msv 3024

Here's a link to your Simpson manual: http://simpsoncleaning.com/wp-content/uploads/2016/manuals/megashot/MSV3024-I-pwmanual-7107460.pdf No oil is required for the pump. 10W-30 is normally specified for a Honda GCV160-GCV190 engine. You drain the oil by removing the oil cap/dipstick and then tilting the machine on it's side so that the oil can drain out if the oil fill into a container. (Drain when warm so it flows easily). The capacity of the engine is ~18.6 oz. Refill amount is ~12.0-13.5 oz. (either engine). When refilling, add oil and check on dipstick often. To check, press the dipstick into the oil fill, but DO NOT SCREW IT DOWN. Just insert the dipstick in until it contacts the top of the oil fill. The correct reading is between the lower and upper limits marked on the dipstick. (You may have to look carefully to see the marks).
