You need to isolate the problem. Since you're sure that the battery is not the problem, you need to check the following:
1. Make sure that there's no possible interference between the remote and the fan. Example, wireless phone that might interfere with the wireless signal of the remote going to the fan.
2. Check the distance, make sure that you know the recommended distance of the remote from the unit.
If you get the same problem after checking the things mentioned, there's a possibility that the crystal (transmitter either on the remote or the unit itself) is no longer working. You may need to contact the manufacturer for second opinion.

The service manual says:
To replace the fuse:
1. Disconnect power at service entrance.
2. Remove filters, bottom panel, light wire harness, and air chute.
The fuse is actually right behind the fan controls, so to access it you need to disassemble everything that's in the way.
BTW, for anyone wondering if it's the fuse that's faulty, here's a clue:
If the fuse has opened (blown), the green fan-level indicators will operate properly when the fan buttons/switches are pressed - but the fan and lights will not turn on.
The fuse is a 5 x 20 mm, 10 Amp, Fast-Acting, 125V (min.).

I am a retired career chef, and had this one oven with choking CO in an airport catering kitchen. We had it serviced and it was fixed. It sounds like yours is not getting enough air mixed with the gas. Adjusting the gas is one thing but the venturi to the burners can partially block and unburned gas spills over. Remove the burner and venturi and boil it out in whatever you boil your fryers out with.
Are you on mains gas or propane because the jets are different.

Before you contact a tech to look at it, try turning off and on the fuse on your fuse panel for your range hood. Other units (Kitchenaid) can be reset this way.
Please post if that doesn't resolve the issue.
With a small screw driver and a steady hand. Set the knob to the temp u want then pull knob off. Inside the stem there is a little screw. Try and regulate it slowly also allow it enough time to reach the desired temp. Good luck.
