How do I adjust the side burner flame on a Weber grill?
The burner has a fixed orifice, but there may be an adjustable air shutter (to adjust more or less air) at the end of the venturi tube that inserts over the orifice. If not, also try removing the gas valve knob and see if there is a small screw inside the shaft that you can adjust the flames. Most stoves have these. Also be sure the burner hasn't been spilled on. it may just need to be cleaned for a proper flame.
Why does the gas on the grill keep going out when i release the button
many gas appliances have a safety valve that only allows gas to flow if the start button is depressed, or if the device senses if the flame is lit (usually by sensing the temperature nearby the burner, sometimes by electronic means) this is to stop the gas should it bet extinguished or not lit for some reason.
it may be that you have to wait longer before releasing the button so that the unit gets properly hot (you might have tried this already) if that doesn't work the maybe it needs replacing, but perhaps it could be some sort of damage/distortion or dirt that is effecting the valves ability to sense that the flame has been successfully lit. Of course it might be simpler than that - if it is a new appliance (to you) then perhaps track down the basic user manual in case you are not using right technique (just press or press and turn?)

Solution #1 is the answer -- replace the regulator. The problem is that the regulator is stuck closed. You can either replace it, or pop the little metal cap on the top off and adjust it. (Use a large philips screwdriver). Do a full turn counter-clockwise, and then 3/4 of a turn clockwise.

Steel with either a black porcellian finish or a chrome finish. Depends on the model.
Stainless Steel or Cast Iron is my personal favorite. It wears extremely well and is easy to clean.
Can I replace burner tubes

Yes you can replace the burner assy...go to walmart or your local bbq parts house...look at your burner first to get an idea of what it looks like before you go to purchase
