Why does the bottom of my cakes burn before the center is done?
Because your oven gets too hot on the bottom part. Use a rack to position your cake in the centre of the oven or - if the bottom of the cake still burns - insert a baking tray between the bottom of the oven and the rack on which you bake the cake on.

How to cook
Roast peanuts and rub off the skins. Run it in the grinder for 5 minutes, adding a few tsp of peanut oil or other unflavored vegetable oil, if necessary. You can add in some sugar and salt to taste.

Recipe for oatmeal cookies
Oatmeal cookies
Makes 20 cookies
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
2 teaspoons vanilla extract
1 2/3 cups all-purpose flour
1 teaspoon ground cinnamon
dash of nutmeg (optional)
dash of ginger (optional)
3/4 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon baking powder
1 1/2 cups quick cooking oats
Preheat oven to 350 degrees F. Line 2 large baking sheets with parchment paper or spray with non stick spray.
In a large bowl with an electric mixer, beat butter and both sugars until fluffy. Mix in egg and vanilla until well blended. Combine flour, cinnamon, nutmeg, ginger, baking soda, salt, baking powder and in a bowl. Stir into butter mixture. Gently stir in oats until well blended.
Shape dough into rounded golfball-sized balls (about 2 Tbsp. each). Place on prepared baking sheet . Flatten with the bottom of a measuring cup dipped in sugar.
Bake for 8-10 minutes. Let cool on baking sheet 5 minutes before removing to rack to cool completely.

Can you freeze carrot cake?
Yes you can freeze carrot cake, wrap in cling film, then in foil, making sure cake is completely covered. Alternatively wrap in cling film and place in airtight plastic container, don't forget to label with date.
