There has been a lot of worries of a chicken sitting in a crock pot for a few hours on low. It could get bacteria growth started. So ALL NEWER crock pots are cooking at a higher temperature to prevent this issue. It has totally ruined the purpose of the crock pot. I actually replaced my new crock pot for an older one I found on EBAY and it solved my problems of over cooked food. Here is a test to see if your food is being over cooked.
Here is a good way to test a crock pot to see if it is a "hot" one. Fill the crock pot 1/2 to 2/3 full with one to two quarts of water. Heat on LOW for eight hours. Check the water temperature with an accurate food thermometer. Do this quickly because the temperature drops 10 to 15 degrees when the lid is removed. The temperature of the water should be between 185 to 200F. Temperature readings above 185-200F indicate that a food cooked for 8 hours without stirring would be overdone.
Turn crock pot a little more down wile cooking and add a little more water to what your cooking with a little oil to the water.
