I just purchased a Maytag Centennial washer ..it will NOT fill the tub completely with hot water. I have been told that is an 'EPA' spec .. is there anyway to over-ride or go around the sensor that is preventing a total 'hot' fill?

Maytag Centennial Top Load Washer drains as it fills.

The water is probably siphoning out of the tub. Your drain pipe is either too low or the drain hose is down too far into the pipe. Take the drain hose out of the pipe and lift it high. I'll bet your problem goes away

We had the same problem with our Maytag Centenial Washer. I simply removed the Auto Fill Sensor, cleaned the contacts with Deoxit contact cleaner and problem solved. All was done in less than 20 minutes.

Maytag Centennial washer agitates when filling. Spins out but adds water after spin cycle so clothes are soaked with water when washer has completed cycle.

The water-level switch regulates your washer's fill volume. This switch is usually a diaphragm device with a small, clear tube attached between the switch and the bottom of the washer's outer tub. As the water level in the tub increases, the pressure on the air in the tube increases. When the pressure reaches a certain level, it activates the switch, shuts off the water, and signals the timer to begin the agitate cycle. If the switch is defective, it may prematurely signal the water to shut off. If so, you probably need to replace the water-level switch.

There may be a water level/pressure switch that will accommodate your washer. However, if you install it, I am certain that during the normal warranty period, if you need service, the manufacturer will probably void your warranty if they notice the alteration!

Contact an appliance service company.
