To enter simulation mode you need to press the following 4 buttons in quick succession:
# * C *
The # & * keys are to the left & right, respectively, of the zero key,
the C key is the red C to the right of the number 3 key.

I have the same stick, the throttles are actioned by the little levers in front of you at the bottom of the stick, I dont quite understand what you mean by level number...
all you have to do is configure them in the configuration panel of the flight simulator, I use same simulator for practice.
