What are the different fields to apply in hotel management?

For applying in an institute of hotel management most do not have any criteria you could be student of botany for all it matters as this discipline does not require any expertise in your 10+2. So you could be a student of science stream, commerce stream or humanities you would be heartily accepted by any institute.
