I have just done what you said you had done, but I got a nice, correct table of values. You might have discoverd a secret command to clear memory.

Some old junk is in memory. Reset the memory to defaults and everything will be fine. It is a good practice to clear memory before a new calculation.
To reset memory
Press [2nd][MEM][7:Reset][1:All ram][2:Reset] [EMTER] . Clear screen and enter the functions you want to graph.

You are jumping the gun here. Try first to see if adjusting the contrast will not solve the "problem".
To LIGHTEN screen display.
Turn calculator ON by pressing the ON button.
Press the [2nd] key and release it (Press it just one time)
Press the down arrow and HOLD pressure (keep pressing).
The screen should start lightening up.
Release the Down Arrow when screen contrast is good enough for you.

I meant what are you trying to do? There is not a stat button (that I know of) on the TI 89, but I can guarantee you that there is a way to do what you want to.
