Make sure you railroad the drywall to add strength. This way you grab more studs than if you stand up the drywall.
I agree with Justin on 5/8" but if you are putting it on a wall, you won't have the sagging issues like ceilings. I built a house 5 years ago and used 2 x 6" studs on 24" centers and used 1/2" drywall. Don't think I'll do it again. For future benefit of others reading this, better to go 16" centers for strength on both sides of the wall.
5/8 of an inch is recommended. You may be able to get away with 1/2 inch if you don't really care, but i would check with the building inspector first

If your doing a ceiling that's 24 o.c it's best to go 5/8 but on walls it's perfectly fine to go 1/2 in
ceilings use 1/2 inch unless commercial also space your screws 8 inches apart this will keep the board from sagging in the future use 1 5/8 screws
