How do you adjust the temperature

Water lines inside doors are typically not serviceable as the insulation is "foam in place". Pulling apart the door and reassembling will be next to impossible. Generally the door would need to be replaced.

The first question I have is the length of spent unplugged. I would keep it unplugged for at least 15 minutes to allow all the capacitors to discharge. I'll keep thinking, just let me know if the above works.

I had the very same issue. The freezer is actually responsible for cooling the fridge via fans. On the back of the fridge there's an access panel near the top containing 2 boards. The large one is the control bd. Make note of the connections and remove the board. Right where these fans plug in there are 3 switching transistors and a power regulator. Replace all 4. This is a common issue. A good place to get these is at digikey.com. even with shipping they only cost less than $10 USD. Also, on replacement, put a THIN coating of heat sink compound. You can get it at the same place or Radio Shack.

A hair dryer or very carefully using a heat gun.
