I had some wine over

Sounds like the unit is in remote command mode 2 (DVD 2) - and you set the remote incorrectly, since you said you did ENTER and 1 on it. You can try to reset the remote to command mode 2 (DVD 2) by pressing (and holding) ENTER and 2 (together) - for 5 - 10 seconds - on the remote while pointing it at the unit, then release. The remote should now match/command the unit correctly and fully (unit must be turned on when doing this and should always be done whenever batteries are replaced in the remote).

This hopefully should work for you.

My recorder show HOLD how

Hello
Reset the unit to its factory settings by the following methods.

Press and hold CH Up and CH Down button on the main unit for about 5 seconds.
(Current channel line-up and television program list are cleared.)

Select "Yes" in "Restore Default Settings" in the SETUP menu.

This returns all values in the SETUP menus, except for the clock, channel settings, ratings
level, and on-screen language, to the default settings.

While the disc tray is open, press [DVD] then press and hold REC button and Play/ [PLAY/* 1.3] BUTTON on the main unit at the same time for 5 or more seconds

Press and hold POWER button on the main unit for 10 seconds. (The settings remain.)
OK.

Cannot finalize disc with a panasonic DMREH60D

I also have a DMR-EH60 which after some time failed to finalize recorded dvd's. When finalizing the dvd unit was making grating noises and then would display the finalized failed note.
The machine was sent in for servicing which worked fine for a few months and failed again.
In dicussion with the technican we found that the rubber drive plater for the disc was getting contaminated with a dust type residue which allows the disc to slip in it's drive causing the reader to be confused, with the result of a failed finalizing function.
If you are game disconnect from the power and open the unit up and carefully take the top off the dvd unit and clean the plater with is-propyl alcohol, this seemed to work fine. The residue problem will be an on going problem however once you have cleaned it once it's pretty straight forward.Just be careful removing and reinstalling the dvd top cover.

My Panasonic DMR-EH60 powers down

This is either a software bug on this system or a setting in the menu that is set to shut down after every disc burn. Have you gone through the menu / setup of the dvd player to look for such an option? I am not seeing one in any documentation but that is the only thing that makes sense. Either that or you have a glitchy version of the software on the system, which is almost a manufacturing defect...

I have been dubbing DVDs in high speed in SP mode

There's a setting to record in high speed mode and I suggest you always do that. If a recording in SP doesn't fit on a standard disc I think you will find it won't dub at high speed either

Can't Finalize a disk on Panasonic DMR-EH60 DVD Recorder

It sounds like you haven't selected DVD first. When dubbing to DVD, you need to do this in HDD mode. When finalizing, you need to be in DVD mode for the finalizing options to come up.
