check printer settings and ensure that the print color is ticked

Here is a video from HP explaining the process. IF you followed this procedure and are getting errors, then you may have bigger issues. I am assuming you are using genuine HP ink, not remanufactured or refilled cartridges. Replacing Cartridges for HP Officejet Pro 8600 All in One Printer Series...

1. Measure the paper you are using. A4 or Letter. 2. Set your printer driver default (on the computer) to the size in step 1 3. In each of the program like excel, word or adobe, remember to check page setup and make sure the size is that same as the paper size.

Use Avery Label sheet. Set correct paper size on Word and the Operating system. Use label from Sheet feed tray only. According to the printer specifications for the Officejet 8600 Pro Plus, the following label sheet sizes are supported; HP Officejet Pro 8600 All in One Printer series N911 Manuals

Did you use HP ink or generic? Generic inks will only be recognized if they have the chip that talks to the printer. That is not to say they won't work - you just will not know the level. If you did use HP you have to make sure you have removed the taped portions, and that it "clicked" when you put it in the cartridge. Also - double check you really put in Cyan, I have put in the wrong color in a slot and it will not recognize the cartridge - boy did I feel really silly that day!

Hi Rather than give you a long screed about the cartridge replacement, if you go to this webpage, it is a manual for your printer in pdf format which you can save to your computer for future reference: http://h10032.www1.hp.com/ctg/Manual/c03026243 The relevant page of the manual for changing cartridges is page 93 of the manual. This refers to the "ink cartridge access door". If it is not obvious where this on the printer when you look at it, then page 13 of the manual shows you where it is. If its scanning well and is out of warranty ignore it. If its under warranty get it replace. Quite often its not a problem, or just the high resolution stepper motor Operating.
