The best way to download pictures from your camera to your computer involves removing the memory card from the camera and plugging it into a card reader (either built-in to the computer or connected via USB or FireWire). The date and time (and a lot more) are stored with every picture in its EXIF metadata. Any photo viewing/editing program should be able to display this data. To print this data, please consult the documentation for whatever program you're using to print your pictures. Depending on the program and printer you may print the date on the image, in the margins, or on the back.

While you took out the sim card, I think you mean the memory card, did you switch the lock switch to the lock? Or is it in another position (half way) and not in the position, so the camera sees it is allowed to write on the card? Are you sure the card has enough space to store pictures?

Taking pictures at night is just like taking pictures during the day, except it's darker. In order to get enough light to the image sensor, you need to either increase the sensor sensitivity (increase the ISO), open up the aperture (smaller f/numbers), use a longer exposure (which may require putting the camera on a tripod or other stable platform), or a combination of the three. Or put more light on the subject, perhaps by using the flash. The flash on your camera doesn't put out very much light (when compared to the sun). You can't use it for subjects far from the camera, or when you want things at different distances illuminated evenly. You didn't state the model of your camera so I'm afraid I can't tell you how to change any of the three settings I mentioned in the first paragraph.

Next, since the lens won't close, the camera senses an error condition and is programmed to shut down. Has the camera been exposed to heat(hot car) or any kind of moisture? Check carefully for impact damage--if the lens is crooked or has become mis-aligned. Has the camera been to the beach recently? Blowing sand(which can be almost non-viewable to the human eye) is notorious for jamming electronic equipment such as camcorders or cameras.
