tank water heater? if so its because the water is much colder this time of year. water heater has to work harder to heat 40deg. water than 70deg. water in the summer. That also means as you use the hot water from the tank its replaced with very cold water. Causing you to have less hot water. Either get a larger water heater. Or even better go tankless and have never ending hot water and save money at the same time.
I suspect the gas control valve is bad, and possibly the ECO and FVIR sensors shorted. Repairs might require replacing gas control, eco, fvir, igniter, and then clean burner and combustion parts. the gas valve can be replaced, but you will have to pay for installation. this is not a DIY. You can throw money and parts at it. Personally I've replaced my water heater at the first sign of problems. Are they inexpensive no If you furnish model number I can look further.
if system is new call whomever installed it and it repaired under warranty. there are several reasons unit is not producing hot water. First thing I would check is temp setting. Again call for service under warranty.
