My temperature needle keeps going up, nearly to the red. The fan comes on when it wants to unless I ride with ac or heater on then it doesn't rise.

You possibly have AIR in your cooling system. You will have to bleed the air out of the cooling system. there is a bleeder valve on your thermostat housing.

97 es 300 car runs great stopped at store 30 min when restarted heavy white smoke

White smoke means water is getting into the engine from teh coolant system. Likely that your engine cylinder head has a crack, or head gasket is bad

Car jerks when I stop only when I have air conditioner on

When the aircon is switch on it puts a substantial load to the engine: you need to get your car tuned to take into account the load from the aircon. Most car have a mechanism that increases the idle speed when the aircon is active: if you are unable to get your car tuned yet, try making the engine idle speed slighty faster while you have the aircon turn-on (the ajustment screw should be close to the accelator cable connection at your engine end). Don't make the idle speed too high and check by turning the aircon off and on to assess the best compromise idle speed to stop your car from almost stalling (e.g. jerking).

Good luck!

Overheating 2001 chevy impala

Believe it or not, new thermostats can be bad. Did you maybe get some adhesive on the thermostat preventing it to open fully? Is the thermostat installed with the crown up? The only other thing that I can think of, if it's a closed cooling system and the wrong radiator cap is installed, it won't hold the pressure, therefor overheating. The other thing may be the water pump. Many times the impellers will wear down internally causing to low of water flow.

Fan not turning off

You say that the air con is not cold, i think the problem would be the aircon will need regasing, if the gas has escaped from the system, the temperature in the aircon system will always be warm so the fan will continue working attempting to cool it down. It will need checking for leaks, most companies that recharge the system check the whole system for leaks first before refilling the system. If its the engine cooling fan it could be the thermo switch that is faulty, the way to check that is when the engine is cold disconnect the wires from the switch and put an ohms meter across the swith it sould not give any reading, it will only show a reading when the engine reaches operating temparature. hope that helps. regards Richard
