You may have combustion in the cooling system causing no heat and pushing water out of the reservoir. Some tests are: If you remove the cap of the reservoir (after the engine is cool) run the engine at idle and check heat. If you are getting heat, then put cap back on and see if heat disappears. If so then you're getting combustion in there. Possible head gasket problem. Hope that helps!
How is the condition of radiator, maybe needs to remove and service.
Fill coolant to correct level if flow not good possible pump failing also pressure test system
If the heater core is clogged this will happen also do you know if stop leak was put in if so your whole system needs to be flushed out you must look for greenish grey Sandy looking grit or reddish brown stuff if so your entire system is blocked causing the overheating condition try bypassing the heater core if you don't see stop leak in the system otherwise oxalic acid flushing a few times first with high pressure water then add the acid and run for a few hours to break up the stop leak trisodium phosphate will do it to but after doing this you must use baking soda to nuetralize the pH in the system for an hour then water again for an hour then flush it again good luck there's other stuff that you can use to but it depends how long that stuff is in there you may need a new radiator and a heater core home Depot or Lowe's has the trisodium phosphate be very careful do not breathe the dust when mixing with water a safer truck is Pepsi or Coke and yes I did say that they have phosphoric acid in them and it will eat the stop leak but it takes longer or by straight phosphoric acid at Lowe's or depot
It sounds like you have an air pocket in your system. By the RH strut tower take the heater hose loose from the metal line and fill the cooling system when coolant starts coming out reconnect the hose. If that doesn't work jack the car up where the over flow tank is the highest point and fill the cooling system.

It sounds like you have stop leak somewhere in the system that heater core is part of the circulation coolant if it is plugged up that's why your overheating coolant expands when heated and no circulation will cause it to go to a place to get out and that's the bottle you must either fix the heater core or run with no thermostat at all this will help till you get off the highway the engines temperature will in creases that's shy the fans come on after wind cooling has stopped
Also make sure the thermostat was installed facing the right direction understand that I'm not there so I don't know what your capabilities are and mistakes can happen but I definitely think you have stop leak or a clogged radiator heater core or both from stop leak or using regular water you must use distilled water for the cooling system and the battery cells
