1995 Mazda MX3 - in the winter, the colder it gets, the longer I have to idle before putting in gear to drive or it dies. Would that be a temperature heat sensor problem?

SOURCE: A 92 Mazda mx3 with a 1.8ltr v-6 while at an idle

change the idle air control motor and check to see if the ports are clogged, this too will cause surging idle. the idle air control motor is located on or near the throttle body

As soon as i start my mazda mx3 the temp gauge goes right to hot whether its first thing in the morning or after ive been driving it all day.

You probably have a bad temperature sending unit. It is located on the front of the engine and it will have a single wire connector. The wire color will be BLACK/ORANGE.

It looks like the picture below

I have replaced the fan belts and my '95 mx3 squeels in gear and I can smell rubber but everything is moving when idle.

One or all belts aren't tightened enough.
The squell is a belt slipping.
It does it in gear because there is more drag then.
Smelling rubber either because they are new belts, or the belt is way to loose.

Idiling

here is what you need to do, a cleaning of the intake throttle blade and the idle speed control air-bypass valve, they get full of gunk over the miles and cause idle issues (stalls) like yours,
Get a can of intake cleaner from any local parts store, not carb spray, intake cleaner, it is made by a company called CRC, remove the air intake hose to the engine, hold the idle high so the engine won't stall, then spray the can of cleaner into the intake while keeping the engine running, use at least 1/2 the can, shut down the engine and disconnect the battery for 5 minutes, then restart and complete a number of mixed driving cycles, town, freeway, stop and go etc., after a few days the problem will go away as the system will relearn to the clean intake
