I will start with your question about the fuel injectors. If they are the problem, there are chemicals which are inserted into the fuel rail while the fuelpump is turned off. These harsh chemicals clean the injectors directly from a pressurized can which your engine runs on until the can is empty. It is better than using any gas additive because it is strong and will not dissolve your fuelpump.
The problem sounds like the exhaust system is clogged. This can happen if the baffles in the muffler collapse or the catalytic converters are ruined.
Even the catalytics should have activated the "Check Engine" lights if they were that bad. You can get free scans at Autozone, Advance, and Oreilys autoparts, but most will not do it if there is no "check light". Be that the case, then you need Dealer type equipment which goes far beyond the handheld scanners.
You could also have a fuel pressure problem which limits the RPM. You could have activated the LIMP HOME mode which limits engine RPM. Even the traction control(If equipped) can limit RPM.
Now I do not know how you checked the mass airflow meter, but if you disconnected it, a "check engine" light may have appeared. The TPS, throttle position sensor, usually either breaks or works, but check the resistence with an Ohmmeter and work the throttle to see if the TPS has any flat spots on it.
