This can be a cause of being bit low on freon. As the engine rev's up the suction press drops below the normal press turning off the compressor to save it from damage. Watch this YouTube clip to see what happens when the system is low. Notice the gage goes down and the system shuts off, then the gage comes back up and the system restarts. Next, watch this video to see how to put a can of freon in your car to fill it up. Start with a 1 can of freon. Hope this helps FixYa up.

The service soon light means it would be time for an air filter, fuel filter, oil change. If you have some hesitation, I would start with the air filter, check it, if clean, think about this, you say it only has 40k miles but she is at least 11 years old almost 12. Do you keep it in a garage? or outside. If outside the spark plug wires may need changing, is the check engine light on? Also if kept outside you can have condensation water in the fuel, which can cause some of the problems you state. Try a good fuel additive if you think that is the case. If your Check engine light is on take it to a local auto parts store they will read the codes for free and give you some ideas as to what may be the cause..The 2000 -2004 Bonneville's have some issues with the A/C control's. If yours has the separate dual front seat controls you may have a problem there as far as the A/C compressor cutting off. Thats about all I can think of off the top.
Thanks for the Thumbs up. Rich, if you need help again I am here, BUT your next problem may be out of my area. Thats why there are so many of us here to help. I don't know everything. Hope I was help, and am glad to assist you.

The AC itself is working "GREAT"! It'll freeze you out of there, if you don't turn it down. But, when the accelerator is pressed, then the AC compressor just shuts off. (display shows "AC off"). We'll get a can and check it out ... (I have a neighbor that can help me).
I'll let ya' know how it turns out ...
My wife (who is downtown in the car at the moment - she called in the problem) says the AC never came back on.
Addendum: I took the car in on Friday to have the mechanic look at it. I've got a "Service Engine Soon" light ... the engine when first started, kind of sputters like it's missing a cylinder. Then after it warms up, it seems to work fine. Often, while driving down the road, when we accelerate say to pass a car, the car hesitates, or it may go ahead and downshift but then hang up and hesitate in returning to the highway gear (Drive).
The mechanics said they put it on the diagnostics and were getting 'spikes' out of the system. They recommended replacing the fuel filter, spark plugs, and wires. The spark plug wires look in great shape to me, and the vehicle only has 40,000 miles on it. The plugs/wires should last up until 100,000 miles.
I think these guys are "shooting from the hip" on this one ...
Ideas? (if you're ideas are good, I'll up the antie ... I'd rather pay someone who knows what they're doing) Let me know. I'm still with ya' ...
My wife will be returning this afternoon, at which time I can physically check some things out.
Would you email me with a link so I can deal with "you" the next time I come here?
We "topped off" the freon (not actually freon anymore) and the AC is working now! We're testing it for longevity. Granted, if it loses again we might need to have the system checked for leaks, but I'm told with the terrible heat we've been having that it would not be unusual to have this occur.
Thank you for all of your help/advice!!

If there's no "link" I can use to get to you again through this thing, thanks anyway!!

This guy was "RIGHT-ON" with his diagnosis!
I would like to use him again, if possible. Can you guys send me a link so we do this properly? I don't mind paying for "sound advice" in helping me with this. He did good ... no, "GREAT"!!
